Renowned Irish chef Adrian Martin has dedicated his career to assisting families in overcoming the challenges of everyday cooking. As the ambassador for the upcoming Barnardos Dalkey Lobster Festival on August 23-24, Martin has shared valuable insights for families aiming to prepare delicious meals while adhering to a budget.
Essential Tips for Cooking on a Budget
When preparing seafood, Martin emphasizes the importance of purchasing fish fresh on the day of cooking. He advises keeping marinades brief, ideally around 10 to 15 minutes. Utilizing citrus and spices can significantly reduce strong fish odors, making seafood more appealing for novice cooks. He recommends starting with milder fish, such as monkfish, to build confidence before progressing to stronger varieties.
“I think a lot of people tend to stay away from fish because they don’t like the smell,” Martin noted. “But if more people buy it fresh, the less smell there would be. So I always say, if you’re cooking fish, buy it on the day.”
For families looking to manage costs, Martin suggests introducing at least one vegetarian meal per week. This strategy can help lower expenses without compromising nutrition. He also recommends opting for budget-friendly meat cuts, such as minced beef, chicken wings, or drumsticks, which are often more economical than cuts like steak or lamb.
“Mince is probably the most versatile thing you can buy,” he explained. “You can make lasagne, shepherd’s pie, Bolognese, burgers, meatballs – a variety of different meals.”
Reducing Food Waste and Saving Time
Reducing food waste is another priority for Martin. He suggests planning a weekly menu and shopping based on that plan to minimize waste. Leftover vegetables can be transformed into curries or sauces, while ingredients like ginger can be frozen for later use.
“Write a menu at the beginning of the week because if you do this, you’ll know exactly what you’re cooking, which will help you cut back on a lot of food waste,” Martin advised. “Don’t be afraid to freeze food as well. I think the biggest waste of food is small things like ginger.”
For families with busy schedules, Martin offers time-saving strategies such as batch cooking and freezing meals in advance. He also advocates for the use of tools like air fryers and pre-made dishes to streamline the cooking process.
“I do think an air fryer, in particular, is an amazing thing for saving time; it cooks food so quickly,” he stated. “People are so busy nowadays, but I think if you follow any of these tips, it will make a difference.”
The Dalkey Lobster Festival, set in the coastal town of Dalkey in south Dublin, promises food stalls, local produce, live music, and family-friendly entertainment. Martin will engage with local food producers and showcase the quality of dishes available at the festival.
“I love food festivals, and I think when you have something like lobster involved, things just can’t go wrong,” he expressed. “For kids, there will also be lots of entertainment, such as magic shows, face painting, and character performances.”
Having joined Barnardos as an ambassador 13 months ago, Martin’s commitment to helping children has deepened since becoming a father himself. He emphasizes the importance of events like the Dalkey Festival, which support local communities and highlight the creativity behind culinary offerings.
As the festival approaches, families are encouraged to explore Martin’s practical cooking tips to not only save money but also reduce food waste and enjoy nutritious meals.
