Discover Culinary Delights at Malta’s Ta’ Ċiċivetta Farm
The charm of the Maltese countryside captivated visitors during a recent experience at Ta’ Ċiċivetta Farm, a family-run rum estate located in Mofret ir-Rizz, just outside Rabat. Organized by Aer Lingus and Visit Malta, the trip offered an immersive look into the farm’s rich heritage, hospitality, and the unique local culture.
Owned by Tony and Charlotte, Ta’ Ċiċivetta Farm spans over seven tumoli of land. The farmhouse, originally built in 1914 and meticulously restored in 2019, showcases stunning original stone arches and honey-colored walls that evoke a sense of history. The traditional courtyard features a water fountain, whispering stories from centuries past, adding to the estate’s allure.
Upon arrival, visitors were warmly welcomed by Tony and Charlotte, creating an atmosphere that felt instantly inviting. The sound of a local mandolin player filled the air, enriching the experience with traditional Maltese melodies. The welcome was not just a greeting but a heartfelt invitation to explore the essence of Malta.
Culinary Adventures Unfold
The culinary journey began under a lush canopy in the garden, where guests were treated to a spread of local delicacies. Flour-dusted boards displayed fresh ricotta and steaming kettles of tea, setting the stage for a hands-on cooking experience. Guided by a local chef, attendees learned to prepare pastizzi, Malta’s iconic flaky pastries filled with creamy cheese or peas. The atmosphere was light and joyful, as laughter accompanied the folding of dough beneath the sunlit olive branches.
No Maltese meal would be complete without ħobż biż-żejt, a traditional sourdough bread layered with tomato paste, tuna, olives, and capers. Tony introduced this classic dish with enthusiasm, providing each guest with a box of fresh local ingredients to create their own unique version. This culinary challenge fostered a sense of friendly competition, with each sandwich reflecting the island’s flavors and simplicity.
As lunch approached, the garden transformed into a shaded dining haven. Guests enjoyed platters of vibrant salads and assorted meats, complementing their handmade creations. Chilled glasses of Maltese wine sparkled in the sunlight, enhancing the leisurely conversation that filled the air. The cicadas’ steady song provided a natural soundtrack to the gathering, further enriching the experience.
Toasting Tradition with Local Rum
As the afternoon drew to a close, Tony presented small glasses of the family’s signature rum, distilled on-site. The smooth, aromatic drink encapsulated the spirit of Malta, prompting a toast to the hosts and the exceptional hospitality that had characterized the day. With raised glasses, guests celebrated not only the rum but also the connections forged under the warm Maltese sun.
At Ta’ Ċiċivetta Farm, tradition is not simply preserved; it is actively lived and shared. The experience left a lasting impression, demonstrating that this remarkable estate is a place where the heart of the island beats strongest, beneath the olive trees and along sun-drenched pathways. Through music, culinary artistry, and genuine hospitality, Ta’ Ċiċivetta Farm stands as a testament to Malta’s vibrant culture, inviting all to partake in its unique magic.
